2021 was a very complicated year. Unprecedented frost in April followed by rains throughout the spring season. The vintage was saved by an wonderful sunny September month. We were very pleased to see how this complicated vintages matured after maturing in the sandstone eggs.
Late pruning during descendant moon in January. Organic and biodynamic agriculture practices. De-weeding mechanical. During the april frost periods valeriane was used to diminish stress for the vines.
Wine made from grapes without any intervention or added produce. This vintage needed very special attention during harvest. Maturity of the grapes was not very homogene and grapes were harvested according to maturity. Natural yeast, no filtering or fining. 14 months maturing in sandstone eggs of 225l from limoges.

This wine deserves a simple but excellent dish. Therefore we recommend to get a fillet of beef from the best butcher in town. A fillet of beef from an organic raised animal. You will have to cook it "blue mais chaud". Rare inside but warm! Therefor take a frying pans heat a chunk of butter, add a dash of oil and fry each side of the tenderloin 5-6 minutes and keep pouring the warm butter and oil with a spoon over it. Salt at the end and thats it.
